Summer Salad Recipes!

Happy Summer, MOGO!

I hope everyone’s summer has started off on the right foot! I just recently made it back to Minnesota after another semester of school in Fayetteville, and I am so excited to be back! We have a lot up our sleeves for this summer, but I decided to start out with a new recipe blog, to start some healthy habits for the summer, and show you guys that salads do NOT have to be light or boring!

These salads can be switched up anyway you like, and can be used for snacks, aside dinners, or in larger portions as lunches! The best way to make these salads quick to make for busy weeks is to meal prep the greens portions, chicken, beans, and dressings, so when you are in a hurry, they can be made quickly! We meal prepped three chicken breasts to be used throughout the week, and we also portioned out our greens into separate containers for each salad to make it easier!

Salad #1: Strawberry Chicken Salad

This salad is often used in spring restaurant menus, but it is oh so easy to recreate! This refreshing salad is perfect for the summer, and can be whipped up in minutes if you choose to meal prep the chicken! The amounts of each ingredient are all personal and to taste.

Ingredients:

  • Spinach or Kale (or a mix)

  • Chopped strawberries

  • Chopped walnuts

  • Hemp seeds

  • Grilled Chicken

  • Balsamic Vinaigrette

Salad #2: Chickpea Salad

This salad is bright and full of flavor, nutrients, and fun! It is refreshing and perfect for a summer by the pool. For this salad, we chose to use the Trader Joe’s roasted red pepper hummus to dress the greens and add an extra punch of chickpeas! Any protein choice can also be added to the ingredients to make it an even more filling lunch!

Ingredients:

  • Mix of Spinach and Romaine

  • 1/4 cup chickpeas

  • Chopped cucumbers

  • Sliced cherry tomatoes

  • Diced onions

  • Balsamic Vinaigrette

  • Dollop of hummus

Salad #3: Taco Salad

This is by far one of my favorite salads, because it incorporates chips and guacamole! It is a simple salad that can easily have corn, salsa, or any veggies added and still taste delicious!

Ingredients:

  • Mix of Spinach and Romaine

  • 1/4 cup black beans

  • Optional: Add corn

  • Crushed tortilla chips

  • Dollop of guacamole

  • Sprinkled cheese

No matter how simple or diverse, these salads are perfect for the summer, and can me made for any hectic lifestyle in order to keep the busy days healthy! Add any personal favorite greens or dressings to make these your own!
